
Chef’s Story: Chef Emily Lim is a Chinese-Singaporean immigrant that started off her career not in the culinary arts but in marketing and mass communications and decided about ten years ago to completely shift fields. She studied at the Culinary Institute of America in Singapore and in 2014 immigrated from Singapore to the US for an internship and then a job. From that she was discovered and asked to be a part of Guy’s Grocery Games where she won their World Fusion Championship. She was also asked back to be a part of the Summer Grillin Games Tournament. She now owns Dabao Singapore in San Francisco, CA where she has found what she is meant to do, share Singaporean hawker food (Singaporean street food) with her new community!
Our Inspiration: We asked Chef Emily Lim what her ideas were for the tablescape design and she told us she wanted the area to remind her of the feeling of dining in an indoor food market in Singapore as her specialty is hawker food. So we had paper lanterns stationed around the restaurant with colorful napkins and small bud vases to illustrate the vibrance and liveliness of a Singaporean food market. Also as another pop of color and as a nod to popular Singaporean food preparation a banana leaf was laid above the plate as a resting place for the guests’ chopsticks.
The Kitchen: Etto Pasta Bar is a restaurant located in Paso Robles that makes their own fresh Italian prepared pasta and uses locally sourced ingredients from over a dozen farms and ranches in the area.
